Little Box, Big Tricks!

Summer-time means a calendar full of invites to BBQs.  Every host wants to showcase their unique recipes and impress you with their own secret recipes and their special ways to grill.  Am I right?  :-)  

If you are looking for your own little secret to show off,  I have just the one to share with you.  It’s a tiny box that can do big tricks.   It’s a smoker box I bought from Williams Sonoma in Westport, CT a year ago.  It’s made of stainless steel with a perforated tray inside.  The meat is placed on top of the tray while soaked aromatic wood chips are placed under the tray. The lid is then placed on the box, and the whole box goes on your grill.   As the heat releases the fragrant smoke from the chips, it hits the meat and flavors as wells as cooks it.  

I am not exaggerating when I say that we put ordinary hamburger patties in there, and they came out almost tasting like deeply flavorful smoked sausage.  It makes a difference of night and day to the flavor. 

If you keep the lid off the smoker then the entire grill will do the job of a smoker – although not as effectively as the closed-lid box. 

We used Williams Sonoma’s smokehouse hickory chips for our little magic trick.  You can also experiment with using fragrant herbs in the smoker. 

Note:  The smoker is not huge.  It can fit about 4 burgers or 2 steaks comfortably.  So when we have large parties, we do most of the cooking on the grill, and then keep moving our almost ready meats into the smoker to finish the job and add some punch of smoky flavor.
