How many times have I heard that expression! And whenever I do, I think I kinda-sorta know what it means. So I pay extra care in garnishing my meals with fresh herbs and spices when company is over, or oooooh and aaaahhh when I see a pretty plate at a restaurant. But let me tell you that, there is a restaurant in Connecticut that made me appreciate this idea on a whole new level.
Chef Joel Viehland of Community Table in Washington CT, is uber creative when it comes to his food. Employing outstanding and cutting edge techniques and tricks, he makes each dish looks like a work of art…. and taste like nothing you may have ever tasted.
Chef Viehland has a repertoire stretching from Gramercy Tavern in New York to working with Emeril Lagasse in New Orleans to working with Rene Redzepi at the legendary Noma in Copenhagen. With such a wide range of culinary experience he has a deep understanding of ingredients, flavors, textures, cooking techniques and of course the art of plating.
At Community Table, chef Viehland is celebrating a strong connection between the locally sourced and sustainable farm fresh produce with dynamite dishes coming out his kitchen. I felt his style to be all about artful presentations paired with surprisingly delicate and aromatic flavor compositions. He uses the most unique ingredients (like milk thistle seed, elderflower, mache and nasturtium) and techniques to create a play on textures as they thrill you with each bite. And I guarantee that a few times during the course of the meal – you will exclaim, “how did he do that?!!!”
Chef Joel and his team do their own salting, smoking, pickling, drying and curing! To me it is proof of the utter joy in all aspects of cooking. And therein lies the essence of Community Table.
