The Dressing Room had been a long standing institution gracing the culinary landscape of Westport, CT. A brain child of actor Paul Newman and the pioneer of farm-to-table dining - chef Michel Nischan, it has been Westporters’ favorite “go-to” place for many years.
What I love about The Dressing Room is that it offers great contemporary cuisine along with a healthy dose of good old-fashioned American food. Not too many restaurants these days offer soul-satisfying dishes like chicken and dumplings or meatloaf. Have you had Dressing Room’s meatloaf? It is fab!
While chef Michel Nischan is actively changing the way America thinks about sustainable products and local produce, Chef Jon Vaast has taken over the reins as the executive chef of Dressing Room. Chef Vaast clearly respects the tradition that The Dressing Room stands for, and has managed to showcase his own personality into the menu. This fact was clear to me as I enjoyed a wonderful happy hour hosted by The Dressing Room in collaboration with CTBites – just a few days ago.
We enjoyed delicious pulled pork sliders with cole slaw garnish, roasted garlic and shallot custard, smoked sunburst trout mousse with gigante bean puree and trout caviar, smoked buffalo wings with caveman blue cheese and gazpacho shooters.
While every bite that went in my mouth was delicious, I absolutely fell in love with the roasted garlic and shallot custard. Mmmm…. It was so smooth and creamy with the wonderful flavor combination of two of my favorite things: garlic and shallots. Served in cute egg shells – it was a pleasure to look at as well as to eat! Another one of my favorite things was the smoked buffalo wings. They were amazing. Spicy and smokey - and just plain good. This dish is on the menu – so be sure to check it out.
We sipped our delicious cocktails out on the beautiful patio, on a gorgeous summer evening, with immaculate service and wonderful friends and fellow foodies. Could life get any better? :-)
