A Michelin-star winning chef who has extensive experience in the culinary cultures of the world, he brings together flavor profiles from near and far to create the ultimate dining experience. Always focusing on locally grown ingredients and mixing them with a dash of flavors from around the world, all the while balancing and layering the four key taste elements (sweet, salty, sour and spicy) - what Cheffed finally puts on a plate is enough to make me want to devour instantly. And if the lights can just be turned down a bit - I may even lick that plate clean (oooh baby)!
Underground Eats in NYC was curating a cooking class and three course dinner by Cheffed. The topic was “Cooking with Aphrodisiacs”, and I was instantly intrigued. All signed up for the class, I started to speculate on what this evening will entail. As I pondered over the word, “aphrodisiac” - things like oysters, wine and chocolates came to mind. But to my surprise, Cheffed revealed that many more foods fall into this category. Garlic for instance, despite it pungent aromas and taste, is an aphrodisiac. Even chillis. So are herbs like cilantro and parsley. Citrus plays a huge role in this equation as well. But equally important is the art of enticing our various senses: smell (aromas), touch (textures), sight (the art of plating) and of course taste (creating that ultimate umami experience).
Perhaps the most under-appreciated yet the most effective trick is the element of surprise. When you make someone sit up and take notice. When that someone simply exclaims, “Wow”! All through the evening, and in each and every dish, Cheffed orchestrated that element of surprise with ingredients and flavor combinations that you would never dream could go together so harmoniously. Like the cilantro foam served with the white chocolate pot de creme. Truly orgasmic! I am still stunned at how that cilantro just perfectly complemented the white chocolate. Wow!
Cheffed is your go-to for pop-up dining events, as well as an elite supper club in New York city. He does not own a restaurant anywhere. Nope, he loves to create dynamite experiences in the most unusual of places: rooftops, warehouses… you name it!
The cooking class was totally hands on, the event was super intimate with just fifteen some people, conversations were enamoring, and this foodie was in pure heaven!
