Well! How do you like the sound of that?
No. I am not describing some utopia from our dreams. This is a place as real as the food they are planning to serve you and me. A lot of restaurants try to come close to this vision…. but very few succeed in realizing it down to every minute detail.
Back 40 Kitchen. Here is a place that accomplishes its goals right down to the organic fine wines, and non-GMO spirits & cocktails it will serve! Unbelievable! My first question, of course, was - does the taste get compromised? But after trying a couple of cocktails last evening at a bustling friends and family reception, I can gladly declare the answer is “no”! Bring it on!!!!
Most restaurants can’t even dream of setting such high standards in food quality. One can image that the cost of running a restaurant with such lofty goals must be pretty high. After all, we all know that it is significantly expensive to buy organic and seasonal produce at our local farmers market. A big reason for the elevated cost of organic food is that our state does not give local farmers enough subsidies to operate. Growing only organic produce, the farmers run a high risk of losing their crops to various elements of nature. Yet they have chosen not to spray their fields with chemicals. They are passionate about this movement. They are determined to feed their families and ours healthful food… like nature intended. They are farming the way farming is supposed to be.
Bill & Leslie King, owners of this fabulous concept restaurant, Back 40 Kitchen, are deeply committed to this movement and to spreading the knowledge about organic farming and healthful eating. Most of the produce at Back 40 Kitchen comes from Bill and Leslie’s farm in Washington CT. And the rest is sourced from various local organic farmers and purveyors.
This restaurant is crafted for a range of appetites and diets - without compromising on the integrity of the ingredients or the sophistication of the dish. A very tall order, it seems. But last night proved that the team at Back 40 Kitchen, under the leadership of chef George Demarsico, is totally up for the challenge.
I tasted a bunch of gluten-free bites at this event. Now, this is stuff that I normally stay away from - because my biased opinion is that the taste gets compromised. Not at Back 40 Kitchen!!! Here even the gluten free bites were unbelievably delicious. All the food tasted fresh. Each ingredient was shining in its own right - like the amazing pickled vegetables - so incredibly crunchy and just bursting with crisp fresh flavors. Wow!!!
Back 40 Kitchen is beautiful little restaurant at the heart of Greenwich Ave in Greenwich CT. The decor is “organic”. There I said it!!! Lots of wood and natural textures complement the ideology. I loved the chalk mural on the focal wall as well as the large list of local purveyors proudly listed right across from it! One look - and you just get the place.
Back 40 Kitchen is opening to public on Monday. Check it out…. it’s a delicious beginning to a very bright and healthful future for us all.
